HOW TO PREPARE EFO RIRO

This traditional sauce made by adding green vegetables to
tomatoes. It is very nutritious and usually eaten with white
rice

Ingredients

  • 1/2 cup palm oil
  • Plenty Greens e.g. spinach
  • 10 fresh tomatoes, blended
  • 300g dried fish (optional)
  • 200g stockfish (optional)
  • 1kg Meat
  • Chilli pepper to taste
  • 1 onion bulb, finely chopped
  • Salt to taste
  • 1 seasoning cube

Directions

  • Season and boil the meat properly until there is little or no stock remaining
  • Put the oil in a pot and add the onions, tomatoes and chilli pepper
  • Allow to cook for about 10mins
  • Add the dried fish and leave it to simmer for about 3mins
  • Add the green leaves, seasoning cubes and salt to taste
  • Serve with rice
